Our Gingersnap

Jamie Graber developed a passion for raw food after college when she realized that food is fuel and nothing to fear. After college, Graber moved to Los Angeles, where she learned about the Raw Food Diet, and a light bulb went off. Graber became passionate about learning all she could about the raw lifestyle. She studied to be a raw-food practitioner while working under Juliano Brotman, a pioneer in the raw food movement and owner of Juliano’s Raw, a restaurant in Santa Monica.

Seeking a new challenge, Graber left Juliano’s Raw in 2007 to become manager for Euphoria Loves Rawvolution, a raw vegan restaurant and retail shop in Santa Monica. Here, she learned to create cleanses and worked to form a partnership with YogaWorks, a popular yoga company, where she was able to teach clients how to balance the ancient practice with a healthy diet and cleanse workshops. Graber created a menu of raw juices, shakes and soups for the participants, led discussions and offered personal coaching throughout the entire experience.

A longing for the dynamic energy of New York City and the need to be closer to her family influenced Graber to move back to the East Village in 2010. Graber soon discovered there was a void in the market for a well-designed, comfortable raw vegan restaurant with approachable food for people with all eating preferences: strict vegans and those looking for healthy alternatives from time to time.

After much deliberation, Graber decided to take the ultimate leap and open her own restaurant, playfully named “Gingersnap’s Organic,” after her own curly, red locks. At Gingersnap’s Organic, Graber maintains her dedication to using high quality, sustainable and environmentally friendly products. She can be found at Gingersnap's every day, behind the counter, talking with guests and ensuring that all of her customers leave satisfied.

[GO] offers an eighteen seat café constructed entirely of sustainably sourced materials. We also have plenty of outlets and chargers for your laptop or smartphone. Open until midnight every night, the café encourages BYOB, offers free wifi, and plug-in stations that make the space a perfect spot to spend an afternoon or an evening.
